Ice Cream Cake Tutorial

I love all of the cakes that I make, but birthday cakes for family members are something that I get super excited about because I get to really tune into my creativity. So, a few weeks ago I asked my boyfriend what kind of cake he wanted for his birthday thinking that he would pick a theme and I would create something based off that. However, much to my surprise, he asked for an ice cream cake. After the shock wore off I bucked down and resolved that if ice cream is what he wants, ice cream is what he'll get!

Honestly, it ended up being a lot easier than I expected and I encourage you to make one for your next event too! Scroll down to see the step by step process.

The one thing that I didn't do, was take a picture of all of the ingredients that I used:

  • 2 Boxes Brownie Mix + Recommended Ingredients to Prepare
  •  12 Chocolate Chip Cookies
  • 1 Package Oreos
  • 2 Jars Sundae Fudge
  • 1 Container Oreo Ice Cream
  • 1 Container Cookie Dough Ice Cream
  • 10" + 12" Cake Board
  • 10" Cake Pan
  • Wax Paper

Mix both boxes of brownie mix per the package directions. Grease and flour a 10" cake pan and a 6" cake pan, split the batter appropriately and bake.

Once done, remove the brownie layers to cool but wash the 10" pan because that's what you're going to form your cake in! After the pan is washed, place the 10" cake board in the bottom of the pan and line the sides with wax paper. Place the 10" layer on the board and set the 6" brownie layer aside.

Pop the container of cookie dough ice cream in the microwave for a few seconds if need be, and spread a layer of ice cream over the brownie layer. I used about 3/4 of the container. Put the whole "cake" in the freezer for at least 30 min.

While the cake is chilling, crush 1/2 of the package of Oreos and mix with 3/4 of the container of fudge.

Crumble 1/2 of the chocolate chip cookies and place on top of the fudge mixture. Then Soften and spread 3/4 of the container of Oreo ice cream on top of that. Return to the freezer.

Create another fudge-Oreo mixture and spread it over the Oreo ice cream layer. Return to the freezer. After the cake has hardened, it's time to remove it from the pan. Place a plate or another cake board on top of the cake and flip it over and out of the cake pan. remove the bottom cake board and replace it with the 12" board. Return to an upright position. Remove wax paper.

Top your cake with the remaining brownies, chocolate chip cookies, oreos, fudge and whipped cream. Keep it in the freezer until your ready to eat it and enjoy every last bite!
